Fajita-Style Ranchero Bean Tacos

Mexican food has become even better since becoming a vegetarian! Instead of plain, low grade greasy hamburger, cheese and lettuce tacos, we’ve been making delicious fajita-style bean tacos with various sautéed veggies and spices. SO GOOD. I’m bummed to say that I didn’t make the ranchero sauce in this recipe, but if you find the can of pre-seasoned pinto beans, you can whip these babies up in about 10 minutes!
I used Kuner’s Southwestern Ranchero Beans found at a local supermarket. Usually, I prefer making homemade sauces but it’s nice to find simple pre-made items like this instead of defaulting to macaroni and cheese or peanut butter and jelly sandwiches! Kuner’s cans several different beans with various sauces. I’ll be testing pretty much all of them since this first taste test was a success!
On a different, ghtly disappointing note… my pretty pink pastel plates do not look good under ANY food display except for desserts.  They look fabulous in my kitchen cupboards though!
