Simple Curry over Mixed Lentil Pasta

When I first transitioned to vegetarianism, I leaned heavily on pasta meals for comfort and convenience. I admit that it took a bit of time to establish a brand new style of cooking and routine. However as a fairly large health food fanatic, I knew the carb splurge wouldn’t last long. I’m someone who has always read nutrition labels and researched the health benefits of every food I’ve ever eaten for years and years and years…and years!
It was inevitable that basic white flour and rice pasta would soon be replaced by ancient superfood grains like quinoa pasta and whole grain pastas. Recently, I was offered Mixed Lentil Penne to try by Modern Table Meals. It’s made with both red and green lentil flour and contains more protein, iron and dietary fiber than other healthier pasta options. At the very least, with options like these, you don’t have to feel as guilty consuming pasta regularly.
Fact: I never feel guilty eating pasta because a large part of my diet is vegetables and fruit. Carbohydrates are part of a healthy diet, providing your body with much needed fuel and energy. I encourage you to read A Guide to Vegan Nutrition for solid information on plant based nutrition!!
I’m someone who likes to make one common meal (like pasta or tacos) one hundred different ways. This way, it is literally impossible to get tired of the same meal! Plus, it keeps things entertaining and feeds your body with a wide variety of good food. Variety is important for keeping your body supplied with all the important vitamins and nutrients.
To accompany Modern Table Meals’ Mixed Lentil Penne, I created a simple curry for your family to devour and mine to remember the recipe!

Simple Curry over Mixed Lentil Pasta

A delectable curry loaded with lentil pasta, potatoes, and carrots. The ultimate comfort food, filling and tasty enough for both vegans and omnivores alike.

15 minutes
Ingredients
  • 1 can coconut milk
  • 2 cups vegetable broth
  • 1 cup potatoes cubed
  • 1 cup carrots chopped
  • 1-2 tbsp curry powder see recipes notes
  • 1 tsp salt
  • 1 tsp sugar
  • 1 small onion chopped
  • 2-3 cloves garlic minced
  • 1/2 pkg Mixed Lentil Pasta from Modern Table Meals
Instructions
  1. Sauté onions and garlic in a medium saucepan.
  2. Add coconut milk, vegetable broth, potatoes, carrots, curry powder, salt and sugar. Cook 7 minutes.
  3. Add mixed lentil pasta and cook additional 8-9 minutes until pasta is tender.
  4. Serve immediately with a baguette, naan or any favorite oven/bakery fresh bread.
Recipe Notes

I’ve used both 1 & 2 tbsp of curry powder successfully in soup-based curries. Start with 1 tbsp and taste-test before adding more curry.
